Four Ways with… Tarantella’s Organic Plum Tomatoes

Do you have a tin or two of plum tomatoes in the cupboard? If so, then take inspiration from four of our favourite recipes using organic plum tomatoes (and if not, we’re pretty sure these will inspire you to add a tin to your shopping basket next time!).

From Creamed Corn Black Bean Enchiladas, to a hearty Tuscan Bean and Tomato Soup, and not forgetting our tasty and zingy homemade salsa dip, these dishes make the most of our tomatoes’ plump and succulent consistency. Here at Tarantella, we harvest our tomatoes when they’re ripe and juicy making them naturally sweet and great for enhancing flavour – simply perfect for adding depth and texture to these (and other) recipes.

Creamed Corn Black Bean Enchiladas by Rude Nude Food

Juicy plum tomatoes, black beans, red onion and peppers make the base for this tasty filling, tightly wrapped in tortillas. Topped with a homemade creamed corn and a sprinkle of fresh salsa, this recipe is vegan too, so everyone can enjoy it.

Bean Casserole

There’s nothing more comforting than a casserole and this one is packed with a variety of different beans and veg to fill you up. We just love serving ours up alongside some creamy mash potato.

Tuscan Bean and Tomato Soup

Batch cook this chunky and moreish soup for your lunches this week. We have added orzo, carrot, beans and pancetta to our organic plum tomatoes, which we have kept whole, so you can enjoy the bite of juicy Italian goodness.

Homemade Nachos with Salsa Dip

Serve these nachos freshly baked from the oven with this spicy, zingy salsa. We’ve blended our organic plum tomatoes with diced onion, fresh coriander, fresh lime juice, jalapeno slices, crushed garlic and a tablespoon of maple syrup.
