Braised Lamb Shanks

Ingredients – Serves 4

1 tbsp vegetable oil

2 large onions, chopped

4 garlic cloves, crushed

4 lamb shanks

500ml red wine

250ml balsamic vinegar

75ml olive oil

1 lemon, quartered

2x400g tins Tarantella Organic Chopped Tomatoes

Salt and pepper, to season

Bunch of fresh basil, chopped

  1. Preheat the oven to 180 °C

  2. Pour the vegetable oil into the bottom of a casserole dish and heat gently. Add the onions and garlic and sweat for five minutes until golden.

  3. Arrange the lamb shanks on top of the onions and brown on all sides for 5 minutes.

  4. Pour the wine, balsamic vinegar and olive oil over the browned lamb. Add the lemon quarters, then pour the Tarantella Tomatoes over everything and season.

  5. Add the basil, then cover and place in the oven. Cook for 2 hours covered, then remove the lid for the last hour. Serve straight from the casserole with the reduced syrupy juices poured over the shanks as a gravy.
